Wan Tan soup

Ingredients for 4 servings

16 Pc Wonton wheat noodle dough sheets
400 G Ramen noodles
300 G Mini Pak Choi
2 Pc spring onions

Ingredients for the filling

200 G Minced meat, mixed
2 Tbsp Soy sauce
0.5 Federationcoriander
1 prizePepper from the grinder

Ingredients for the broth

200 G Soup bones
1 l water
1 Pcclove of garlic
2 Stg Lemongrass
2 Tbsp Soy sauce
1 prizesalt
1 prizePepper from the grinder
1 Federation Soup greens

Recipe preparation

  1. Clean, peel and roughly cut the fresh soup greens. Wash the bones and roast them together with the soup vegetables and garlic in a pan until golden brown. Fill everything up with a liter of water. Add the lemongrass, which has long been sliced, and 2 tablespoons of soy sauce and simmer for about 45 minutes over low heat.
  2. In the meantime, season the minced meat with soy sauce, finely chopped coriander and pepper. Mix everything well and let it steep for ten minutes.
  3. Then lay out the fresh wonton leaves on a damp kitchen towel. Brush the edges of the individual wonton dough sheets with beaten egg white and place a portion of the minced meat filling in the middle. Then fold it into a triangle and glue the two most distant pointed corners to form a small ship.
  4. Strain the cooked soup broth, season with salt and pepper and pour into a saucepan. Bring to the boil again shortly before serving!
  5. Now put the finished wonton in boiling salted water and let it simmer for about five minutes, remove it and keep it warm. Do the same with the ramen noodles. Wash the pak choi and blanch it in salted water.
  6. Then divide the pak choi, wonton and ramen into four preheated soup bowls and fill up with soup stock. The final garnish is chopped spring onions and fresh coriander.
